The production of our Comalats wine strictly adheres to traditional principles, working in sustainable harmony with nature, and, notably, at an altitude of 715 meters above sea level.

The grapes that we use come exclusively from our own harvest, and all of the vineyards are cultivated ecologically. Our fields are situated perfectly for organic farming, as the altitude works against numerous pests and diseases that often afflict lower-lying vineyards, and our isolation puts us far from industrial contamination: even the nearest main road is twenty kilometers distant.

From harvest then to production: our wines take shape in the cellars alongside the vineyard, or – in the case of Comalats Cuprum – in old Cal Bonet, the cellar in our house, resting in barrels of French and American oak.  Maceration and fermentation occurs within stainless steel tubs at a controlled temperature.
